The country is made up of wild areas of Mediterranean
scrub land, vines, tabacco crops,oak plantations and olive trees.
The Murge which is present here forms a rocky ground.
Crossing
the country we can see: dry walls elegantly built covered
in myrtle, branches of ilex and thorny oak the habitat of reptiles,
bugs and microfauna.
Ancient agricultural centers dating from 1600 made up noble
or functional rustics (sheepfolds, threshing floors, oil crushers).
Valuable architectural and aristocratic villas.
Scorrano 35 km from Lecce towards Maglie,
there are particular englobed oaks in cultivations that are named
"egg yolks"
On the salentina coast we can admire olives that have been planted
in niches in the ground, in steps down to the rocky coast.
The
most important natural products are olives, grapevines,
cereals, vegetables, fruit and tabacco.
The cultivation of the olive dates from 1200, the most important
sector of the region is the production and the commerce of oil.
The most esteemed oil is that of extravergin; the harvest is done
by hand to avoid the contact of the olives with the ground. A lot
of hypogeal crushers which were built under the ground is the testimony
of this ancient tradition.
The farmers put the olives in a hole which was on the
same level of the ground on the threshing floor of the trap, the
crusher that is often found on the farms, the olives then ended
in a hold where they were ground, the crushers in disuse were buried
to remove the SCAZZAMURRIEDDHU which in accordance with popular
imagination were the elves that lived in them and are seen in the
form of water vapour. In Vernole between Otranto and
Lecce are different hypogeal crushers dating from 1500.
